For Food and Beverage Cost
Controller
RESPONSIBILITIES:
Overall responsible for the F & B cost control operation in the hotel. To plan and supervise the daily operation of F & B stores, receiving, and purchasing, through guiding and supervising concerned personnel in the execution of their assigned tasks and duties. To provide the Management with accurate figures of the hotel’s F & B costs. To prevent and detect accidental errors and / or fraud related to the receiving, issuing, and sales of items in the hotel’s F & B operation, and to detect, investigate, and report any undue variances in receiving, issuing, and transfer-reports, or any other documents to the Chief Accountant. Ensure that daily issues, requisitions, and receiving reports are entered correctly and on time into the inventory system. Ensure that the Items not available report is accurate, and issued on timely. Check that the Returnable container monitoring logbooks are up-dated. Monitor the physical stock taking of kitchen inventories in main kitchen, butchery, and bakery. Ensure that the checked and finalized store, kitchen, and bar inventories are entered into the Master lists, and to ensure daily, weekly, and monthly F & B cost reports are finalized, and rectify any mistakes that may occur in such reports before distribution, according to SOP.
REQUIREMENTS:
Minimum Bachelor’s Degree, and at least 3 years experience in the same position or similar in a hotel or a similar standard industry.

The Food & Beverage Manager is fully aware of the company standards as outlined in the hotel management manuals, and checklists. The Food & Beverage Manager is expected to know the job description of each staff member in the Food and Beverage Service Department, and ensure that the set standards are kept and staff members work according to their respective job descriptions. Lead subordinates successfully into productive working methods by setting an example and utilizing all available management tools.
